INSALATA AROMATICA DI CECI, OLIVE NERE E PECORINO

Immaginate di arrivare a casa una sera dopo un bel po' che non che siete stati da tutt'altra parte... e Lui non ha fatto la spesa da almeno due settimane perchè è sempre via per lavoro.. immaginate di aprire il frigo e sentire il lupo che ulula.. immaginate che sia davvero molto tardi, e c'è poca voglia di cucinare.. e quindi? Grazie a Dio, in queste sere, esistono i legumi in scatola.. come renderli interessanti, questa è sempre la sfida.



INGREDIENTI per 2 persone (se utilizzato come contorno), per 1 persona (se è la vostra cena, come nel mio caso)
- 1 confezione di ceci in scatola
- 4-5 olive nere a testa
- peperoncino in polvere
- basilico (io ho usato quello surgelato dall'estate scorsa, della gloriosa pianta in terrazzo)
- pecorino
- 1 pugno di sedano, carota, cipolla
- olio evo
- 1/4 di dado di verdura (facoltativo)


1) Scolare i ceci e sciacquarli sotto acqua fredda. Private le olive del nocciolo e tagliatele a tocchetti. Mettete 3-4 cucchiai di olio in una padella, e fare soffriggere le verdure.

2) Aggiungete i ceci, se volete il pezzettino di dado, il peperoncino e le olive. Fate cuocere per qualche minuto lasciando insaporire. Cospargete con il basilico, mescolate con un cucchiaio di legno.

3) Versate l'insalata in una ciotola e grattugiate il pecorino a scaglie grosse.




AROMATIC SALAD CHICKPEAS, BLACK OLIVES AND PECORINO CHEESE
Imagine arriving home one evening after a while that you were away ... and he didn't go to the supermarket because he's away too. Imagine opening your fridge and hear wolves howling ... imagine that it is very late, and there is little desire to cook ... and then? Thank God, during these evenings, there are canned legumes ... How to make them interesting, this is always a challenge.

INGREDIENTS for 2 people (if used as a side dish) or  for 1 person (if it's your dinner, as in my case)
- 1 bottle of canned chickpeas
- 4-5 black olives per person
- chili powder
- basil (I used the frozen from last summer, the glorious terrace plant)
- pecorino
-1 bunch of celery, carrot and onion oil
-extra virgin oil
- 1/4 vegetable nut (optional)

1) Drain the chickpeas and rinse under cold water. Cut olives  into small pieces. Put 3-4 tablespoons of oil in a frying pan, and saute the vegetables.

 2) Add the chickpeas, if you want the piece of nut, chilli and olives. Cook for a few minutes leaving flavour. Sprinkle with basil, stir with a wooden spoon.

3) Pour the salad in a bowl and grate the cheese in large flakes.
