SALMONE ALLE ERBE PROVENZALI E PISELLI AI SEMI DI FINOCCHIO


La prima a parlarmi di questa ricetta è stata mia sorella, e quando ho visto questi splendidi tranci di salmone non ho resistito. Soprattutto dato che con la grigia nebbia che da giorni ci fa compagnia, un bel piatto colorato aiuta l’umore e la psiche (poi possiamo parlare di cosa potrebbe farci sentire meglio in questa situazione economica e politica, ma temo si cadrebbe nell’illegale.. Dai Mario, facci vedere che è possibile pensare a un’Italia diversa, più equa, più meritocratica). Anche in questo caso la ricetta è veloce, con pochi grassi, e adatta ai bambini (e se proprio non sopportano i semi di finocchio, i piselli sono buoni anche senza – anche se più delicati).



INGREDIENTI
- 1 trancio di salmone (con la pelle) a testa
- erbe provenzali (misto di erbe mediterranee quali rosmarino, timo, origano..)
- il succo di ½ limone ogni 2 tranci
- olio evo
- 1  ½ scalogno
- 80g di piselli (io ho usato quelli surgelati) a persona
- 1 cucchiaio di semi di finocchio
- prezzemolo
- basilico

1) Mettete a bollire dell’acqua in un pentolino, salate e mettete a cuocere i piselli per 8-10 minuti.

2) Ungete con 3 cucchiai di olio  una pirofila da forno o da microonde. Sminuzzate lo scalogno, e mettetene 2/3 sulla pirofila. Mettete i tranci di salmone appoggiati sul lato della pelle, in un solo strato.  Irrorate col succo di limone, e cospargete con le erbe provenzali.

3) Mettete in forno a microonde a 850watt per 7 minuti, più un altro minuto sotto il grill. In alternativa, infornate a 200° per circa 15 minuti, più qualche minuto di grill. Naturalmente, potete regolare i tempi in base a la vostro gradimento nel grado di cottura del trancio.

4) Scolate i piselli. In una padella mettete 2 cucchiai di olio e fate soffriggere lo scalogno rimanente. Aggiungete i semi di finocchio, i piselli, il basilico e il prezzemolo e fate insaporire per 2-3 minuti. Servite insieme al trancio di salmone.




SALMON WITH HERBS PROVENÇAL  AND PEAS WITH FENNEL SEEDS

INGREDIENTS
- 1 slice of salmon (with skin) per person
- Provencal herbs (a mixture of Mediterranean herbs such as rosemary, thyme, oregano ..)
- Juice of ½ lemon every 2 salmon slices
- Extra virgin oil
- 1 ½ shallots
- 80g of peas (I used the frozen ones) per person
- 1 tablespoon fennel seeds
- Parsley
- Basil

1) Put water to boil in a pot, add salt and put the peas to cook for 8-10 minutes.

2) Grease with 3 tablespoons of oil a baking dish suitable for oven or microwave. Chop the shallot and put  2 / 3 of it in the baking dish. Place the salmon steaks flat on the skin side in a single layer. Sprinkle with lemon juice and sprinkle with herbs from Provence.

3) Place in a microwave oven for 7 minutes at 850watt, plus one minute under the grill. Alternatively, bake at 200 degrees for about 15 minutes, plus a few minutes to grill. Of course, you can adjust the time according to your liking in the doneness of the fish.

4) Drain the peas. In a pan put 2 tablespoons of olive oil and saute the remaining shallots. Add the fennel seeds, peas, basil and parsley and cook for 2-3 minutes. Serve with the salmon steak.
