RISOTTO AGLI ASPARAGI BIANCHI

Tempo di asparagi. E soprattutto, tempo di asparagi bianchi. Un'eccellenza della zona in cui vivo, e persino qui si paga piuttosto a caro prezzo. Ma tutti aspettiamo il momento di averli in tavola, anche perchè la loro stagione dura piuttosto poco... purtroppo. 



INGREDIENTI
- 320g di riso Vialone Nano 
- 1/3 di bicchiere di vino bianco
- 1 dado vegetale
- 30g di burro
- 3 cucchiai di olio
- 400g di asparagi
- 2 cipollotti
- 2 cucchiai di grana grattugiato

1) Tagliate i cipollotti a fettine sottili, e mettete da parte. Lavate e pelate gli asparagi (sì, gli asparagi bianchi si pelano) , e tagliateli a rondelle, eliminando la parte più dura e tenendo da parte le punte. 

2) Mettete il burro nella pentola a pressione aperta, e fate soffriggere metà degli scalogni, a fuoco basso. Fate tostare il riso per 2 minuti, aggiungete le rondelle di asparagi. Spruzzate con il vino bianco e fate sfumare. Aggiungete 550g di acqua, il dado, e chiudete la pentola. Alzate il fuoco, e al primo sibilo acuto, abbassate la fiamma e contate 6 minuti.

3) Nel frattempo, in una padella fate soffriggere il rimanente cipollotto, e aggiungete le punte di asparagi. Mettete qualche cucchiaio di acqua, e fate asciugare per 5 minuti.

4) Al termine del tempo di cottura del riso, fate sfiatare la pentola, aprite il coperchio, e mantecate con il grana. Distribuite nei piatti, concludete con  le punte di asparagi e servite. A piacere aggiungete qualche cubetto di formaggio morbido (io ho utilizzato un po' di stracchino)




RISOTTO WITH WHITE ASPARAGUS
Time of asparagus. And above all, time of white asparagus. Excellence in the area where I live, and even here you pay them quite dearly. But every year we want them on the table, partly because their season is rather short , and because they're great.

INGREDIENTS
- 320g of rice Vialone Nano
- 1/3 cup of white wine
- 1 cube vegetable
- 30g of butter
- 3 tablespoons of oil
- 400g of asparagus
- 2 green onions
- 2 tablespoons grated Grana Padano cheese

1) Cut the onions into thin slices and set aside. Wash and peel the asparagus (yes, white asparagus is peeled) and cut into rounds, eliminating the hardest part, and by taking the tips.

2) Put the butter in the pressure cooker open, half of the shallots and saute over low heat. Toast the rice for 2 minutes, add the slices of asparagus. Sprinkle with white wine and let evaporate. Add 550g of water, nut, and close the pot. Increase the heat, and the first shrill whistle, lower the heat and count 6 minutes.

3) Meanwhile, in a pan, fry the remaining onion, and add the asparagus tips. Put a few tablespoons of water, and let dry for 5 minutes.

4) At the end of the cooking time of rice, let the pot vent, open the lid, and stir with the parmesan. Distribute the risotto in the dishes, finish with asparagus tips and serve. If u like, add some cubes of soft cheese (I used stracchino)
