PASTA FREDDA INTEGRALE SALMONE E FINOCCHIO

Ultimamente le mie settimane sono, se possibile, ancora più frenetiche del solito.. nel frattempo la primavera si fa sentire, e io ho voglia ci farine integrali e pranzi in ufficio golosi ma leggeri.

INGREDIENTI per 4 persone

- 320g di penne integrali

- 1 finocchio di medie dimensioni

- 200-250g di salmone affumicato

- semi di finocchio

- semi di papavero

- olio extravergine di oliva

- cipolla tritata per il soffritto

1) Fate bollire dell'acqua, e salatela. Mettete a cuocere le penne per il tempo indicato sulla confezione.

2) Nel frattempo,lavate il finocchio, pulitelo e tagliatelo a rondelle. In una padella, mettete 4 cucchiai d'olio, e scaldatelo. Aggiungete la cipolla e i semi di finocchio, e fate soffriggere dolcemente. Aggiungete il finocchio, alzate la fiamma e fatelo insaporire a fuoco vivace per 3-4 minuti, lasciando che resti croccante.

3) Scolate la pasta, aggiungetela al finocchio e mescolate. Lasciate quasi raffreddare, aggiungete il salmone tagliato a striscioline. Cospargete i semi di papavero. Mettete tutto nel lunchbox e buon pranzo in ufficio..

WHOLEMEAL COLD PASTA SALMON AND FENNEL

Lately my weeks are, if possible, even more hectic than usual .. Meanwhile, the spring is coming out, and I feel desire of  wholemeal flours and  tasty but light lunches in the office.

Ingredients for 4 people

- 320g of wholemeal penne shape pasta

- 1 medium fennel

- 200-250g smoked salmon

- seeds of fennel

- poppy seeds

- extra virgin olive oil

- chopped onion tosauté

1) Boil some water, and salt it. Bake the pens for the time indicated on the package.

2) Meanwhile, wash the fennel, clean it and cut it into rounds. In a frying pan, add 4 tablespoons of olive oil and heat it. Add the onion and fennel seeds and fry them gently. Add the fennel, raise the heat and let it flavor with high heat for 3-4 minutes, leaving it to stay crispy.

3) Drain the pasta, add the fennel and stir. Let it come nearly cool, add the salmon, cut into strips. Sprinkle the poppy seeds. Put everything in the lunchbox and good lunch in the office ..
