INVOLTINI SPEZIATI DI MERLUZZO CON SPECK E PERE

Sì sì, lo so che apparentemente sono cose che non c’entrano molto le une con le altre.. ma il risultato è un secondo estremamente veloce e  sfizioso anche se poco condito (e diciamocelo: i salumi danno sempre una botta di vita quando ci si sente un po’ giù).




INGREDIENTI
- 1 grosso filetto di merluzzo a persona (o 2 piccoli)
- 1-2 pere
- 2 cucchiai di spezie miste a piacere (origano, rosmarino, timo, cumino..)
- 150g di speck affettato sottile
- olio evo
- 1 pugno di verdure a tocchetti (sedano, carota, cipolla)

1) Con un pennello ungete una pirofila da microonde con 3 cucchiai di olio, e disponete le verdure a tocchetti.

2) Sbucciate e tagliate a fettine sottili la pera. Disponete le spezie su un piatto. Tagliate a metà i filetti di merluzzo, asciugateli se sono troppo umidi, e passateli nel misto di spezie su entrambi i lati. Disponete 1 fettina di pera su ogni fettina di filetto, o se volete un sapore meno deciso e più fresco, mettete il pesce a sandwich tra due fettine di pera.

3) Create degli involtini con lo speck, e appoggiateli nella pirofila. Mettete la pirofila in forno e fate cuocere a 800 watt per 8-12 minuti a seconda dello spessore del pesce e delle fettine di pera. Servite.




SPICY COD ROLLS WITH SPECK AND PEARS
Yes, yes, I know that apparently are things that have nothing to do with each other a lot .. but the result is a main course very fast and tasty although slightly seasoned (and let's face it: ham, bacon etc. always give a shot of life when you feel a little 'down).  Speck is a distinctively juniper-flavored ham originally from Tyrol, a historical region that since 1918 partially lies in Austria and partially in Italy. Südtiroler Speck ( Speck Alto Adige) is now a protected geographic designation with PGI status.

INGREDIENTS
- 1 large fillet of cod per person (or 2 small)
- 1-2 pears
- 2 tablespoons of mixed spices to taste (oregano, rosemary, thyme, cumin ..)
- 150g of thinly sliced ​​speck
- extra virgin oil
- 1 handful of chopped vegetables (celery, carrot, onion)

1) Using a brush,  grease a baking oven with 3 tablespoons of oil, and place the vegetables into chunks.

2) Peel and thinly slice the ​​pear. Place the spices on a plate. Cut the cod fillets in half, if they are too wet dry them, and bake them in the spice mix on both sides. Arrange 1 slice of pear  on each fillet, or if you want a more delicate tasting, create the fish sandwich between two slices of pear.

3) Create the rolls with speck, and place them in the pan. Put the pan in the oven and bake at 800 watts for 8-12 minutes, depending on thickness of fish and slices of pear. Serve.
