BICCHIERINI DI RICOTTA E VERDURA


Un antipasto colorato in un sabato grigio nebbia senza mai un raggio di sole. Due verdure che ricordano l’estate, e che sono perfette per iniziare una cena romantica a lume di candela.



INGREDIENTI (per 8 bicchierini)
- 250-300 g di ricotta
- 1 confezione di pomodorini ciliegina in scatola
- 1 cetriolo
- 1 cucchiaio di erbe mediterranee miste (rosmarino, salvia, timo)
- basilico
- olio evo
- un pugno di verdure tritate (sedano, cipolla, carota)
- sale
- ½ cubo di dado

1) In una ciotola montate la ricotta con delle fruste elettriche. Se volete renderla più gustosa e meno delicata, mescolate 3 cucchiai di parmigiano grattugiato. Mettetela poi in una siringa da pasticciere con una bocchetta a stella e trasferitela nei singoli bicchieri .

2) Mettete 3 cucchiai  di olio in una padella, aggiungete le verdure e fate soffriggete. Incorporate i pomodorini e il dado, e fate cuocere per 10 minuti a fuoco basso. Completate con le erbe aromatiche e ultimate la cottura per altri 5 minuti. Il sugo dovrà risultare cremoso ma sodo. Fate intiepidire e frullate i pomodori con il minipimer.

3) Nel frattempo pelate il cetriolo, togliete la parte centrale (quella con i semi), tagliatelo a tocchetti e mettetelo in un colino con una presa di sale per 10 minuti. In tal modo perderà l’acqua amara di vegetazione. Sciacquate il minipimer  e il cetriolo, asciugate il cetriolo e frullatelo con un cucchiaio di olio, il basilico e un pizzico di sale.

4) In metà dei bicchieri mettete il sugo di pomodoro, nell’altra metà  la crema al cetriolo. Completate con un ciuffetto di ricotta. 




LITTLE GLASSES APPETIZERS WITH RICOTTA CHEESE AND VEGETABLES
An colored appetizer to contrast the  gray mist on a Saturday without a single ray of sunshine. Two vegetables that remind the summer, and that are perfect to start a romantic candlelight dinner.

INGREDIENTS (for 8 glasses)
- 250-300 g of ricotta cheese
- 1 box of cherry tomatoes
- 1 cucumber
- 1 tablespoon of mixed Mediterranean herbs (rosemary, sage, thyme)
- basil
- extra virgin oil
- a handful of chopped vegetables (celery, onion, carrot)
- salt
- ½ cube of vegetable nut

1) In a bowl, whip the ricotta cheese with electric whips. If you want to make it more tasty and less delicate, mix 3 tablespoons of grated Parmesan cheese. Put the cream into a pastry chef syringe  with a  star-shape nozzle   and divide it in individual glasses.

2) Put 3 tablespoons oil in a frying pan, add the vegetables and fry them for a minute. Stir in the tomatoes and the nut, and cook for 10 minutes over low heat. Complete with herbs and finish cooking for another 5 minutes. The sauce should be creamy but firm. Let it cool and puree the tomatoes with the blender.

3) Meanwhile, peel the cucumber, remove the central part (the one with the seeds), cut it into chunks and place it in a colander with a pinch of salt for 10 minutes. In this way it will lose the bitter water of vegetation. Rinse the blender and the cucumber, dry the cucumber and blend it with a tablespoon of oil, basil and a pinch of salt.

4) In half of the glasses  put the tomato sauce, in the other half put the cream of cucumber . Complete with a tuft of ricotta.

TORTA DI CAROTE, NOCCIOLE, LIMONE – versione 1.0

La carota è una verdura stupenda, e la adoro in ogni suo modo di essere.  In estate mi piace soprattutto cruda, in inverno cotta e speziata e come accompagnamento a tanti piatti di carne quali spezzatino, polpette e polpettoni.. E ovviamente, non possono mancare nei dessert. Sto lavorando su questa torta e sui diversi ingredienti, la composizione e la morbidezza, e prevedo sviluppi che “purtroppo “ prevedono parecchi assaggi che rallegreranno le mie colazioni. Le foto non sono un granché, ma ero davvero troppo di fretta..



INGREDIENTI
- 300 g farina
- 100 g di burro
- 300 g carote
- 100 g di nocciole tritate
- 3 cucchiai di marmellata di limone
- il succo di ½ limone
- 120ml di latte
- 3 cucchiai di zucchero di canna
- 2 uova
- 1 bustina di lievito
- zucchero a velo

1) Lavate e pelate le carote e tagliatele a julienne.

2) In una ciotola setacciate la farina e il lievito. Aggiungete il burro ammorbidito, i tuorli delle uova (tenete da parte gli albumi). Mescolate bene con un cucchiaio di legno.

3) Aggiungete le nocciole, il succo di limone, la marmellata, lo zucchero, il latte e rendete il mix morbido e senza grumi. Montate gli albumi a neve ferma , e uniteli all’impasto.  Amalgamate le carote.

4) Preriscaldate il forno a 180° e infornate per 35 minuti. Sfornate quando la torta sarà cotta all’interno e dorata all’esterno.  Fate raffreddare e coprite con zucchero a velo. Servite, magari con una spremuta d'arancia. 




CARROT CAKE WITH HAZELNUT, LEMON - Version 1.0
The carrot is a wonderful vegetable, and I love it in every way. In summer I especially like it raw in vegetables and in pinzimonio (that is a starter made by raw vegetables and light sauces), while in winter I adore carrots cooked and spiced and as an accompaniment to many meat dishes such as stew, meatloaf and meatballs .. And of course, in  desserts. I'm working on this cake and various ingredients, composition and softness, and I anticipate developments that "unfortunately" provide lots of tasting that will rejoice my breakfast. Photos are't that great, but I was really in a hurry..

INGREDIENTS
- 300 g flour
- 100 g butter
- 300 g carrots
- 100 g of chopped hazelnuts
- 3 tablespoons lemon marmalade
- Juice of ½ lemon
- 120ml of milk
- 3 tablespoons brown sugar
- 2 eggs
- 1 packet of yeast
- Icing sugar

1) Wash and peel the carrots and cut them into julienne strips.

2) In a bowl sift the flour and baking powder. Add the softened butter, egg yolks (set aside the egg whites). Mix well with a wooden spoon.

3) Add the nuts, lemon juice, jam, sugar, milk and make the mixture smooth and without lumps. Whisk the egg whites until stiff, and add to mixture. Mix the carrots.

4) Preheat the oven to 180 degrees and bake for 35 minutes. Remove from the oven when the cake is cooked within and golden outside. Let the cake cool and cover with icing sugar. Serve, maybe with a fresh homemade orange juice.
