TORTA CASALINGA LEGGERA PERE E MANDORLE

Ecco, quando ho tirato fuori dal forno questa torta mi sono sentita davvero contenta.. Era così bella, così chiaramente soffice, così profumata e così semplice che me la sono immaginata troneggiare sul tavolo dei dessert in un uno di quei ristoranti tradizionali  che si giocano la reputazione proprio sul fatto di dare una patina casalinga a tutto ciò che servono. Poi la abbiamo assaggiata, e a) è piaciuta molto persino a Lui (che non ama troppo i dolci)   b) l’ho sentita proprio soffice, e decisamente leggera grazie alla tanta frutta e ai soli 50g di burro utilizzati..  Dato che Lui esprime una netta preferenza per le torte di mele, pere e cioccolato (sì, proprio le più semplici, quelle che fanno comfort food) sono sempre alla ricerca di variazioni sul tema. Questa, un po’ improvvisata, è venuta proprio bene – e davvero profumatissima!



INGREDIENTI
-200g di farina 00
- 1 bustina di lievito
- 2 uova
- 100g di zucchero bianco
- poco zucchero di canna
- 50g di burro
- 6 piccole pere
- un vasetto di yogurt bianco naturale
- latte
- mandorle sfilettate
- una fialetta di aroma al rhum ( o 2-3 cucchiai di rhum)
- 1 limone non trattato
- 1 cucchiaino di cannella
- sale

1) Grattugiate la scorza del limone. Pelate e tagliate 2 pere a tocchetti. Mettetele in una ciotola con il succo di mezzo limone, la cannella, mezza fialetta di rhum e lasciate insaporire mentre preparate il resto.

2) In una terrina, setacciate la farina e il lievito. Separate i tuorli dagli albumi, e aggiungete nella terrina solo i tuorli. Proseguite poco per volta e mescolando con un mestolo di legno, con la scorza del limone grattugiata, lo yogurt, lo zucchero, il succo dell’altro mezzo limone, l’altra mezza fialetta al rhum, il burro fatto sciogliere, e le pere con i loro sughetto.

3) Montate a neve ferma gli albumi con un pizzico di sale, e metteteli nella terrina, mescolando dal basso verso l’alto per non farle smontare. Il composto dovrebbe risultare piuttosto fisso, perciò potete aggiungere un po’ di latte (io utilizzato come misurino il barattolo di yogurt).

4) Preriscaldate il forno a 180°. Foderate una tortiera con della carta forno bagnata e strizzata, e versate il composto. Pelate e tagliate a spicchi molto sottile le altre 4 piccole pere, disponetele a raggiera. Cospargete con le mandorle sfilettate e un po’ di zucchero di canna.

5) Infornate per 40° . Se doveste vedere che è un po’ troppo chiara in superficie, attivare la funzione grill per pochi minuti ( in media 3, a seconda della potenza del grill –io, con il forno non mio, ho quasi rischiato di bruciacchiare la superficie della torta). Lasciate raffreddare, sformate e servite.



LIGHT HOMEMADE PIE WITH PEARS AND ALMONDS
 When I pulled out of the oven this cake I felt really happy ... It was so beautiful, so soft, scented  and so simple that I imagined it dominating on the dessert table at one of those restaurants that play  their reputation on giving a homemade image to everything they serve. Then we tasted it, and a) He liked the cake very much too ( He does not like so much desserts)  b) I felt it so soft, and very lightweight thanks to lots of fruits and only 50 g of butter used. 



INGREDIENTS
-200 g flour 00
-1 teaspoon of baking powder
-2 eggs
-100 g of white sugar
-cane sugar
-50 g butter
-6 small pears
-a natural yogurt
- milk 
- almond fillets
-a rhum flavour vial (or 2-3 tablespoons of rum)
-1 untreated lemon
-1 tsp cinnamon
- salt 

1) Grate lemon rind. Peel two pears and cut them into chunks. Place them in a bowl with the juice of half  lemon, cinnamon, half  vial of rhum and let all flavor while  preparing the rest.

2) In a bowl, sift the flour and baking powder. Separate the egg yolks from the egg whites in a bowl, and add egg yolks only. Little at a time and continue stirring with a wooden spoon, join  the grated lemon rind, yogurt, sugar, the juice of half a lemon, the other half  rhum vial, melted butter, and pears with their sauce. 

3) Mount  egg whites with a pinch of salt, and put them in the bowl, stirring from bottom to top. The mixture should be quite hard, so you can add some milk (I used as measuring the jar of yogurt).

4) Preheat oven to 180°. Line a cake tin with wet and squeezed baking paper, and pour the mixture. Peel and cut into very thin slices other 4 small pears, arrange them radially on the top. Sprinkle with almonds fillets and a little brown sugar. 

5) Bake for 40minutes. If you see that it's a bit too light on the surface, turn on the grill for a few minutes (about 3 minutes, depending on the power of the grill -  With the oven not mine, I nearly threatened to burn the surface of the cake). Let it cool, draft and serve.

TORTINI DI CAVOLFIORE E CUMINO - Versione 1.0

Tutto inizia quando sono in fila dai miei fruttaverdura di fiducia, che hanno prezzi ottimi perchè  utilizzano prodotti del territotio (accorciamento di filiera) e oltretutto già maturi e non sempre "da esposizione" - tipo quelli del supermercato - ma in compenso molto gustosi. Dicevo. Punto subito le arance (la loro stagione sta quasi finendo, e io mi godo una spremuta da tre arance ogni mattina finchè posso), delle piccole pere (di sui vedrete le ricette prossimamente, dato che erano in promozione se ne prendevi 2kg - quindi  giù di preparazioni con le pere) e.. e... belli davvero quei cavolfiori., e che prezzo invitante... sì. Però sul cavolfiore entro sempre in crisi. Nel senso che fa bene, benissimo, bisognerebbe mangiarne un sacco. Peccato che davvero a mio avviso sia la verdura meno saporita in assoluto. Al tempo stesso, Lui invece - grande amatore di verdura - adora il cavolfiore LESSATO, con solo un filo di condimento. Tralasciando il fatto che è l'unica persona che conosco che abbia mai espresso tale valutazione, alla fine ho comprato un cavolfiore, e già mentre tornavo a casa con le sporte di frutta e verdura nel cestino della bici, pensavo a come accidenti poi preparare  il problematico amico.. Questo è il risultato, delizioso senza nascondere il gusto della verdura, con il cumino che davvero è una rivelazione.  



C'è però una nota importante: le dosi di latte e farina sono sicuramente da aggiustare, nel senso che non sono stata a pesare le cimette di cavolfiore (erano circa 500g, forse anche qualcosa di più, per cui ho usato 250 g di latte e 250g di farina). L'essenziale è che la pastella venga abbastanza densa senza essere fissa (ammetto che io ho pensato che aveva la classica faccia da "sbobba" - e ohmioDio come lo tradurrò in inglese questo concetto??), e questo si può valutare solo in fase di preparazione..in caso fatemi sapere, nel frattempo proverò a rifare il piatto stando molto attenta alle proporzioni.. Intanto ve lo propongo così.


INGREDIENTI per 4 tortini
- 500-600g di cimette di cavolfiore (io ho comprato un cavolfiore di medie dimensioni)
- 250g di latte
- 250g di farina
- 2 uova
- 4-6 cucchiai di pecorino romano grattugiato
- 4 cucchiaini di cumino
-1/2 cucchiaino di bicarbonato
- 50 g di burro
- un pizzico di sale

1) Mondate il cavolfiore e ricavatene le cimette. Sciacquatele bene, togliete i residui terrosi. Mettetele nel mixer e tritatele. Aggiungete le uova, il latte, la farina, il burro sciolto, il formaggio, e mescolate (o nel mixer o in una ciotola) fino ad ottenere la consistenza di cui sopra. Aggiustate di sale.

2) bagnate e strizzate della carta da forno, e rivestite 4 stampini. Versate il composto. Su ognuno mettete poi 1 cucchiaino di semi di cumino, e cuocete circa 20 minuti a 850 watt al microonde (giuro che proverò a farli pure al forno normale, ma al momento avevo la torta di pere che stava lievitando..).  Lasciate raffreddare, sformate e servite con i pecorino a scaglie o grattugiato.


 
 CAULIFLOWER CAKES WITH CUMIN- VERSION 1.0
 I was queing to my grocery, that has great prices because they use products of the territory (short chain), already mature and not always "exposure"-supermarket-type ones but very tasty. I pointed the oranges (their season is almost finished, and I enjoy a juice from three oranges every morning as long as I can), small pears (see recipes on soon, since they were in promotion if I took 2 kg of them) and ...  and really beautiful ... those cauliflower with so inviting price ... Yes. When I see a cauliflower within I feel in crisis. It's so healthy, we need to eat a lot of it. It's a pity that really in my opinion it's the less flavorful vegetable. At the same time, my He  is instead great amateur of BOILED cauliflower, with only a trickle of seasoning. Aside from the fact that it is the only person I know who has ever expressed this assessment, I eventually bought a cauliflower, and already as I walked home with bags of fruits and vegetables in basket bike, I thought about how damn then prepare the troubled friend. This is the result, delicious without hiding the taste of vegetables, but with cumin which really is a revelation.

However, there is one important note: doses of milk and flour are certainly to be adjusted, in the sense that I didn't weigh the cauliflower florets (about 500 g, maybe even something more), so I used 250 g of milk, 250 g of flour. The main thing is that the batter must be thick enough without being fixed, and this  can evaluate only doing the dish ... I'll try to redo the dish being very attentive to proportion ...
Meanwhile, I propose to you as well.



Ingredients for 4 patties
-500-600 g of florets of cauliflower (I bought a medium-sized cauliflower)
-250 g milk
-250 g flour
-2 eggs
- 4-6 tablespoons of grated pecorino romano
-4 teaspoons cumin
- 1/2 teaspoon baking soda
-50 g butter
-a pinch of salt

1) Clean the cauliflower and cut  the florets. Wash it well. Put them in the blender and chop. Add the eggs, milk, flour, melted butter, cheese, and stir (or mixer or in a bowl) until you get the consistency mentioned above. Add salt.

2) Wet and squeeze the parchment paper, and coat 4 baking mould. Pour the mixture. Cover with about 1 teaspoon each of them, and cook about 20 minutes at 850 watt microwave (I swear I'll try to get them as well to normal oven, but when I had the torta di pere that was rising as ...). Let it cool and serve with pecorino cheese.
