INSALATA DI FINOCCHI, ARANCIA E ASIAGO

Sì, è vero che è freddo.. ma la verdura cruda e la frutta sono estremamente salutari.. ed un'insalata come questa  è proprio invernale,  ma al tempo stesso colorata, per affrontare con un po' di allegria questi giorni di gelo.





INGREDIENTI
- 2 arance (o 1 arancia e un pompelmo rosa)
- ½ fetta di pane da toast a persona
- 3 noci a persona
- 200g di asiago stagionato
- 1 finocchio
- olio, sale, pepe
- semi di papavero



1) Lavate e tagliate finemente il finocchio. Pelate a vivo gli agrumi e tagliateli a spicchi o a rondelle. Tagliate il formaggio a cubetti. Sgusciate le noci. Tagliate il pane a cubetti e fatelo saltare in padella fino a farlo dorare.

2) Unite tutti gli ingredienti con l’insalata e condite con olio, sale, pepe, semi di papavero. Servite. 


               
SALAD WITH FENNEL, ORANGE AND ASIAGO

Yes, it is true that it is extremely cold . But raw vegetables and fruits are extremely healthy in this season,  and a salad like this is suitable to winter, but at the same time gives colors at these frosty days .


INGREDIENTS
- 2 oranges (or 1 orange and pink grapefruit)
- ½ slice of bread toast per person
- 3 nuts per person
- 200 g of asiago cheese
- 1 fennel
- oil, salt, pepper
- poppy seeds

1) Wash and finely slice the fennel. Peel the grapefruit and cut them into wedges or slices. Cut the cheese into cubes. Shell the nuts. Cut the bread into cubes and let it jump in skillet until brown.

2) Combined all ingredients with the salad and season with oil, salt and pepper, poppy seeds. Serve.



From Wikipedia: The history of the Asiago cheese is lost with that of people of Asiago plateau, hence the name. Conventionally its origin date around the year 1000 since there are rare testimonies from Highland Asiaghese relating to previous centuries. Between the tenth and fifteenth centuries in seven Municipalities plateau, is made up of good grass, sheep was the predominant activity. Thanks to it we had a tasty cheese of sheep's milk and wool was obtained for textile, craft activities and industrial before then, the valleys of Alto Vicentino. The production area of Asiago is identified in the provinces of Vicenza, Trento and neighboring parts of those with them of Padua and Treviso, corresponding to their range foothills, inclusive of irrigated lawns surrounding its, copious springs. The production of Asiago is typical of the homonymous plateau, in which numerous dairies and, only in summer (for the time of vegetation of grasses), in the characteristic barns.

CIALDE DI GRANA CON FUNGHI E POLENTA

Sono sparita, lo so. Ma negli ultimi due mesi sono successe davvero mille cose.. sono iniziati in contemporanea due progetti, molto diversi tra loro, e mi sono ritrovata a reinventare tutta la mia vita, con un altro trasloco e un bel po' di cose da studiare.. se poi ci si aggiunge il buio che a dicembre arriva presto e non permette di fare foto, ecco che arriviamo a oggi.


INGREDIENTI
- 300 g funghi (io  ho usato i cardoncelli)
- 200g grana grattugiato
- ½ pugno di sedano, carota, cipolla tritati finemente
- olio evo
- sale
- prezzemolo
- 300 g farina per polenta precotta

1) Sciacquate velocemente i funghi sotto l’acqua corrente, e asciugateli  bene. Puliteli e tagliateli a tocchetti. In una padella fate soffriggere le verdure in 2-3 cucchiai di olio, aggiungete i funghi e fate cuocere per circa 15 minuti. Se dovessero asciugarsi troppo, aggiungete poca acqua. Completate con una spolverata di prezzemolo.

2) Mettete il grana a cucchiaiate su carta forno, creando 4 mucchietti piatti a forma di cerchio. Infilate in forno preriscaldato a 180° per 7-10 minuti. Quando vedrete il formaggio molto morbido, sfornate e aiutandovi con una paletta levate le cialde dalla piastra e mettetele a indurire su delle ciotole capovolte, così che prendano la forma. In alternativa, versate il formaggio in una piccola padella e seguite lo stesso procedimento.

3) Seguendo le indicazioni sulla confezione, fate bollire dell’acqua, salatela  e versate la farina a pioggia. Fate cuocere la polenta sempre mescolando. Mettetela su un tagliere. Fate raffreddare, e con un coppapasta ricavate 4 cilindri di 1-2 cm di altezza.

4) Mettete la polenta a scaldare in una padella coperta, girandola ogni tanto, finché  si formerà una crosticina croccante su entrambi i lati. Fate scaldare i funghi, metteteli nella cialda. Sovrapponete la cialda sulla polenta e servite. A piacere accompagnate con un po’ di salsa di pomodoro  tiepida.




GRANA PADANO WAFFLES  WITH MUSHROOMS ON POLENTA

I'm gone, I know. But in the last two months really a thousand things happened ... I have started two new projects at the same time, very different between them, and I found myself reinventing all my life, with another move and a lot of things to consider ... If you add the darkness that comes early in December and does not allow you to take pictures, so we get to today.
INGREDIENTS
-300 g mushrooms
-200 g grated grana
-a bunch of celery, carrot, onion finely chopped
- extra virgin oil
- parsley
- salt
- 300 g precooked polenta flour

 1) Quickly rinse mushrooms under running water, and dry them well. Clean them and cut them into small pieces. In a skillet saute vegetables in 2-3 tablespoons oil, add the mushrooms and cook them for about 15 minutes. If they’re too dry, add a little water. At the end, add a sprinkling of parsley.

2) Put the grated grana in spoonfuls onto parchment, creating 4 dollops of circle shaped dishes. Put in preheated oven at 180° for 7-10 minutes. When you see the  cheese is very soft, baked it and with a scoop lift wafers from the plate and put them to harden on the bowls upside down, so that they can take shape. Alternatively, pour the cheese in a small pan and follow the same procedure.

3) Following the directions on the polenta package, boil some water, add salt and pour the flour to rain. Cook the polenta, always stirring. Place it on a cutting board. Let cool, and with a  cylinder  make 4 circles 1-2 cm in height.

4) Put the polenta to heat in a pan covered, turning occasionally, until it will form a crust crispy on both sides. Make heat mushrooms, put them in pods. Overlap the pods on polenta and serve. If u like it, accompany with a little tomato or  bbq sauce.
